How should honey be stored?
Store honey in a sealed container at room temperature. Refrigeration tends to hasten crystallization. Honey has a very long shelf life. It may crystalize after a period of time, but this can be reversed.
My honey crystallized in the jar. What do I do?
Place the jar in warm water or in a warm sunny window. Stir occasionally until all crystals are dissolved. If you have access to a sous vide cooker, place the sealed container in a 105-110 degree water bath for 24 hours. Heating honey in a microwave is not recommended.
How does honey compare with sugar?
Because of its high fructose content, honey is sweeter than table sugar. It also contains various trace minerals, enzymes and antioxidant properties. When used in a recipe as a substitute for sugar, you may need to reduce the liquid content of other ingredients.
